  • Last week @NickTheHorn donated some sourdough starter to me and I baked my first loaf. I've been feeding it again this week and I'm going to attempt a second loaf at the weekend. I'm nowhere near the level of experienced bakers such as Nick, Will and Tika but it tasted lovely and much nicer than anything I could have bought in the shops. My god it took a long time though. This weekend I'm going to give the proving setting on the oven a go and see if I can speed it all up a bit.

    Who else bakes and what recipes do you want to share? I would like do more rye and wholemeal later but for now sticking to a basic white loaf until I get a better feel for the whole process.

  • As well as generally holding my hand through the first 24hrs (sorry Nick) he also sent me this link about Sourdough Pizzas.

    I've been re reading it again today and now I have a bit more knowledge I really want to give it go soon. He also has a list of his favourite pizza restaurants at the bottom, most are New York or Napoli but one of them is Donna Margherita in lavender hill, which is just down the road from me and I wondered if anyone fancied a trip to try their dough.

  • Interesting, I've not heard of Donna Margherita. Looks good.

    There's also Metro nearby which does great pizzas.

  • I do quick and easy Soda bread. Very simple and tastes great. Quite cakey, but that is nice.

    Small loaf

    6oz Plain Flour
    60z Self-raising flour
    1/2 pint of buttermilk (I just use normal milk with lemon juice)
    1/2 teaspoon of bicarb
    1/2 teaspoon of salt

    Mix all together with a fork, form into round shape, no kneeding required. Slam in the oven for 30 mins (180/200) Boom!

  • The higher temp makes for a crustier crust.

  • Week two begins.

  • Trying a wholemeal and a regular white one today. The wholemeal looks like it's going to be like a brick and very 'healthy'.

  • By the way I think my starter is dead... I haven't done anything to it since Christmas, and it's covered in a black film, and looks really sad.

  • I was in Bedmo on Tuesday visiting a local design company and I picked up some sourdough and artisan ale whilst admiring the local street art. I also have a beard.

    All the boxes ticked.

    Culturally, that’s Inkie and Banksy and street art. That’s Massive Attack and Tricky and Geoff Barrow’s Portishead. That’s St Paul’s soundsystems and Gloucester Road and house parties in squats and illegal warehouse raves.

    Sourdough Bristol also means the price of the cheapest house in Montpelier is £300,000. It means the rent in St Paul’s going up from £800 a month to £1,200 a month.

    Reminiscing about the past always looks better through rose coloured spectacles.

    I may have only had to pay £375 for a 1 bed flat in St Pauls in the 1990's , but it meant sharing a hallway with a crack dealer and walking past the hookers to get up the stairs.

    The squat parties were full of crusties with their cheap drugs and smelly clothes and being mugged in St Pauls coming back from a sound system party was never fun.

    Oh , those were the days and we didn't even know what sourdough was .....

  • Looking back its all a bit bizarre . I arrived in Bristol in 1991 as a long haired , middle class , indie kid. By complete fluke I became friends with some of the "cool kids" and next thing I was sharing Red Stripe with Daddy G at a house party, smoking spliffs with Rae & Christian and Roni Size's Reprazent crew back stage at The Thekla, buying records with Geoff Barrow and other dj's , hanging out behind the decks with James Lavelle , DJ Shadow and Krush , nodding at their record selection like I knew something as they played the Blue Mountain.

    I also ended up partying with Matt Pritchard and his mates pre Dirty Sanchez which looking back was a bit odd .

    The flip side was that there was a dark side, my friends had a gun put on the table when they attempted to buy a large quantity of weed from someone, seeing people in the squat scene end up on smack , getting mugged , barricading your flat door as the dealer next door is getting his kicked in by an unhappy customer..

    These days an artisan coffee and a sour dough pizza are much more my cup off tea.
